Here are two recipes for Pavlova, which is a favorite Meringue dessert in New Zealand:

Here's a recipe I got from some folks on the South Island. I haven't tried this one:

2 egg whites
1 tsp. cornflour
1 cup sugar

Beat egg whites very stiff; add sugar and cornflour & beat again.

Pour onto aluminum foil on a baking sheet. Bake in a very slow oven for one hour.

When cold, put whipped cream, pineapple and chopped walnuts on it.

Pavlova Recipe number two. This one works well.:

Preheat oven to 170 degrees centigrade.

Beat at high speed for 8-10 minutes:

2 egg whites
1 1/2 cups sugar
1/2 tsp. vanilla or almond essence
1 tsp. vinegar
1 tsp. cornflour
4 Tbs. boiling water

Spread mixture thinly on aluminum foil on a baking sheet. (Do not grease the foil first.)
Bake for 10 minutes.

Reduce heat in oven to 100 degrees centigrade. Bake for a further 45 minutes.
Turn off oven altogether. Leave Pavlova in oven for one more hour.

Remove from oven. Allow to cool. Peel off foil.

Decorate with whipped cream and fruit.

New Zealanders use kiwis, and berries.

Some like chocolate chips.
